Ingredients for Aaloo Baingan Bari Veg

  • Fenugreek seeds: 1/4 tsp 
  • Dry chillies: 1 piece
  • Ginger & garlic paste: 1 tsp
  • Coriander powder: 1/2 tsp
  • Cumin seeds: 1/2 tsp
  • Tomato: 1/2 small, finely chopped
  • Turmeric powder: 1/4 tsp
  • Salt: as per requirement
  • Potato (diced): 1/2 cup
  • Eggplant: 150 g, cut into cubes
  • Olive oil: 1 tbsp

Instructions for Aaloo Baingan Bari Veg

  1. Wash and dice the potatoes and eggplant into bite-sized cubes. Keep the tomato finely chopped.
  2. Heat olive oil in a heavy-bottomed pan over medium heat. When hot, add fenugreek seeds and cumin seeds. Let them sizzle for 6–8 seconds (careful — fenugreek can burn quickly).
  3. Add the dry chilli and immediately add the ginger & garlic paste (1 tsp). Sauté for 20–30 seconds until the raw smell disappears.
  4. Add the chopped tomato, turmeric (1/4 tsp) and coriander powder (1/2 tsp). Cook the tomato on medium heat until it softens and oil begins to separate (about 2–3 minutes).
  5. Add the diced potatoes and stir to coat them in the spice-tomato mixture. Cook for 2–3 minutes, then add the eggplant cubes. Mix well.
  6. Pour in 1/4 to 1/2 cup of water (as needed), cover the pan, and simmer on low–medium heat for 12–15 minutes, or until the potatoes and eggplant are tender. Stir once or twice to prevent sticking. If the curry looks dry, add a splash more water.
  7. Uncover, adjust salt to taste, and cook uncovered for another 1–2 minutes so excess moisture evaporates and the gravy thickens slightly.
  8. Turn off the heat. Optionally garnish with fresh coriander leaves. Serve hot with roti, rice, or as a side to your meal.
