Ingredients for Chilli Garlic Rice:
- Brown basmati rice: 60 grams
- Garlic: 4 cloves
- Green chilli: 1, sliced
- Spring onion / scallions: 1 tbsp, chopped
- Salt: as per requirement
- Olive oil: 1 tbsp
Instructions for Chilli Garlic Rice:
- Rinse the brown basmati rice well and cook it until soft and fluffy. Spread on a plate to cool slightly and keep aside.
- Peel and finely chop or crush the garlic. Slice the green chilli and chop the spring onion (reserve some green ends for garnish if you like).
- Heat the olive oil in a pan over medium heat. Add the chopped garlic and sauté for 30–45 seconds until fragrant — do not burn.
- Add the sliced green chilli and the white part of the spring onion. Sauté for 1–2 minutes until the onion softens slightly.
- Add the cooked rice to the pan, sprinkle salt to taste, and toss gently to combine so the rice gets evenly coated with garlic and oil. Cook for 2–3 minutes, stirring occasionally.
- Stir in the chopped spring onion greens, check seasoning, and remove from heat.
- Serve hot, garnished with reserved spring onion greens or extra sliced chilli if desired.
