Ingredients for Dahi wali Bhindi:

  1. Ladies finger/ Bhindi: 100 grams

  2. Onion: 1 piece (small sized)

  3. Coriander leaves (chopped): ½ tbsp

  4. Ginger garlic paste: ½ tsp

  5. Curd: ¼ cup

  6. Cumin seeds: ¼ tsp

  7. Cumin powder: ¼ tsp

  8. Coriander powder: ½ tsp

  9. Chilly powder: ¼ tsp

  10. Turmeric powder: ¼ tsp

  11. Garam masala powder: ¼ tsp

  12.  Cardamom: 1 piece

  13. Tej patta: 1piece

  14.  Dried fenugreek leaves: ½ tsp

  15.  Oil: 1 tbsp

  16.  Salt: as per requirement

Instructions for Dahi wali Bhindi:

  1. Heat ½ tbsp oil in a frying pan and add 2 inch pieces of bhindi to it. Saute until it becomes non sticky and changes its color. Remove it in a bowl and keep aside. 

  2. Again heat the remaining oil in the same frying pan and add tej patta, cumin seeds, dried fenugreek leaves, and cardamom to it. Once it becomes aromatic, add chopped onion to it. 

  3. Saute for 1-2 minute and add ginger garlic paste, turmeric powder, cumin powder, coriander powder, garam masala powder, and chilly powder to it and mix well.

  4. Saute until the spices become aromatic. Now make the flame low and add curd to it. Mix well and saute until the mixture starts to separate the oil.  

  5. Now add fried bhindi and salt to it. Mix well and cover until the flavors are well absorbed. It hardly takes 5 minutes.

  6. Now add chopped coriander leaves, mix well and serve hot with roti or rice.
