Ingredients for Paneer Stuffed Moong Cheela

  • Moong dal (raw, split yellow moong): 50 g
  • Paneer (crumbled): 50 g
  • Onion (finely chopped): 2 tbsp
  • Black pepper (ground): ¼ tsp
  • Green chilli (finely sliced): ¼ tsp
  • Salt: as per requirement
  • Olive oil: ½ tbsp

Instructions for Paneer Stuffed Moong Cheela

  1. Soak & grind moong: Rinse the moong dal well and soak in water for 2–3 hours (or 30–45 minutes if using hot water). Drain and grind to a smooth, slightly thick batter using little water. The batter should be pourable but not runny.
  2. Season the batter: Transfer batter to a bowl. Add a pinch of salt, ?–¼ tsp ground black pepper (reserve some for filling if you like), and mix well. Let the batter rest 5–10 minutes.
  3. Prepare paneer filling: In a small bowl, crumble the paneer and add the finely chopped onion, sliced green chilli, a pinch of salt, and a dash of black pepper. Mix until the filling is even. Taste and adjust seasoning.
  4. Heat the pan: Warm a non-stick or cast-iron tawa on medium heat. Lightly grease with a few drops of olive oil.
  5. Make the cheela: Pour a ladle of batter onto the hot pan and spread gently into a round crepe (thickness: approx. 2–3 mm). Cook for 1–2 minutes until the edges lift and the underside turns light golden.
  6. Add the stuffing: Place 1–2 tbsp of the paneer mixture in the center of the cheela. Fold the cheela over the filling (or fold both sides toward center) and press gently. Drizzle a little olive oil around the edges and on top.
  7. Cook through: Cook for another 1–2 minutes on medium-low so the paneer warms and the cheela cooks through. Flip once more if needed to get a light golden crust on both sides.
  8. Serve: Remove from pan and repeat with remaining batter and filling. Serve hot with green chutney, tomato ketchup, or plain yogurt.
