Ingredients for Mint Onion Rice
- Brown basmati rice: 60 grams
- Mint leaves: 3 tbsp
- Onion: 1 small, thinly sliced
- Green chilli: 1, sliced
- Salt: as per requirement
- Olive oil: 1 tbsp
Instructions for Mint Onion Rice
- Rinse the brown basmati rice under cold water until the water runs clear. Drain well.
- Cook the rice with 1.5–2× water (adjust for your rice cooker or pot) until soft and fluffy; set aside and keep covered.
- While the rice cooks, wash and roughly chop the mint leaves. Keep them ready.
- Heat olive oil in a pan over medium heat. Add thinly sliced onion and sauté until translucent and lightly golden (about 5–7 minutes).
- Add the sliced green chilli and sauté for 30–60 seconds to release its aroma.
- Stir in the chopped mint leaves and cook for 1 minute until wilted and fragrant.
- Add the cooked rice to the pan. Sprinkle salt to taste, then gently fold everything together so the mint and onion are evenly distributed. Cook for 1–2 minutes to heat through.
- Turn off the heat. Taste and adjust seasoning if needed. Serve hot as a light main or a side dish.
