Ingredients for Chickpea Salad:
1. Chickpeas: 50 grams
2. Cucumber (chopped): 1 cup
3. Bell pepper (any colour): 1 piece
4. Onion (small sized): 1 piece
5. Cherry Tomatoes: 100 grams
6. Coriander leaves: 2 tbsp
For the Dressing:
7. Olive oil: 1.5 tbsp
8. Balsamic Vinegar: 1 tbsp
9. Garlic (minced): 1 pc
10. Black Pepper (powdered): ¼ tsp
11. Salt to taste
Instructions for Chickpea Salad:
1. Soak chickpeas overnight and boil it.
2. Chop all the veggies. In a large mixing bowl, add boiled chickpeas and chopped veggies and mix well.
3. Mix all the dressing ingredients. Pour over the chickpea mixture.
4. Mix well and serve immediately.
